Happy 2023! The holiday season was truly a blast!  I especially enjoyed the face to face gatherings. Finally, after more than two years, we celebrated Christmas just like before. So, I decided to make the occasion extra special by serving new, healthy, and delightful dishes for the family.

Do you love potato gratin? How about warm, soft and creamy mashed potatoes? Let me create something different using the versatile potato. On our recent trip in Clark,  the hotel served us this mouthwatering gnocchi with white sauce. First look, I thought it was some kind of pasta but after tasting it and asking the waiter, I confirmed it was potato.

About US Potatoes


The humble spud is one of the most popular foods of the western world. They are a nutrient-dense vegetable. In the Philippines, potatoes are consumed as an ingredient in viands and occasionally as a snack item. 


U.S. dehydrated potatoes are made from potatoes grown and harvested in the U.S. and processed under high standards of the U.S. Department of Agriculture. There are many reasons why I like them in cooking. They are versatile, convenient for cooking and come in different forms such as granules, flour, and flakes. 


I personally love adding potatoes in most of my dishes - afritada, caldereta, beef soup (nilaga), among others. My mom would cook scrambled eggs with sliced potatoes as well. You can use them for making bread, desserts, and even appetizers such as salads.


here's how to make gnocchi! 


Going back to the delicious gnocchi I had a few weeks ago, I decided to try the dish using my favorite sauce, pesto! Gnocchi Pesto that is! Here's the recipe for Potato Gnocchi with Pesto Sauce using U.S. standard potato flakes.

Store leftover gnocchi (without sauce but brush it with olive oil) in an airtight container for up to 2 days; gnocchi with sauce can be stored for up to 24 hours in an airtight container. I hope you will try this easy and quick recipe. Share your thoughts.
